Artichoke Hearts

Best EVER Artichoke Hearts Technique!

This is super easy and totally worth the extra effort

Ingredients:
Artichokes
Olive Oil
Salt
(Lemon Juice)

Preheat the oven to 400 degrees
Trim extra leaves off the bottom and trim the stem flush with the blossom so they sit nice and pretty

Next cut the tops off about an inch or two from the top like this :
I stuffed mine with garlic cloves (which I would HIGHLY recommend!)

Drizzle with olive oil and a little bit of lemon juice and top with a sprinkle of salt
Wrap tightly in a piece or 2 of foil
Bake for 40 minutes

YUM.


Beetroot Pizza

Beetroot Pizza!

Yields 4 individual sized pizzas

Ingredients:
1 Beet cleaned
3-4 cups of flour (I used Gluten Free mix)
2 packets yeast
 1 tbsp olive oil


Boil (or bake covered in foil) the beet cut in quarters for about half an hour or until tender
Blend until very smooth
Proof yeast
Punch a hole in the middle of flour and add yeast and oil
Mix gently
Add beet root folding over adding small amounts of water until mixture is smooth and elastic. should not be sticking to your hands or bowl.
Beautiful!
Let dough rise for 2 hours. It won't rise much but the longer you wait the deeper the color
Divide in four sections
Roll out pizza and add toppings
Bake at 350 degrees for about 10 minutes

viola!

Dough does not keep well even overnight cooked or uncooked. Still tastes alright the next day but they coloring isn't as wonderful.
